Yes, the antibiotic did that. However, consider the following: "bad" gut bacteria can create various harms, in various ways. This might very well relate to your UC. Did symptoms improve any after the antibiotic?
Over time, the bad bacteria might return and the original color would likely return. There are some ways to possibly prevent the return. The most suspect bacteria is Klebsiella pneumoniae -- which is starch loving, not fiber loving.
Klebsiella might also be involved with Ankylosing spondylitis and other conditions.

Did the doctor say it is a problem? The food you eat affects stool color so I'm not sure what has you concerned.
