Just read your post I have had the same problem since I was a child too. Same thing got worse as I got older. Then went to a chiropractor who did a weird kind of spinal decompression adjustment to me and I heard and felt a pop and it has never been the same, it has been over a year not getting better, seems to get better for a few days then bad again. I have been to multiple specialists and seeing swallowing specialist like you because the ENT had never seen this before. It creates anxiety as I am fearful it will cut off my airway.
I also have an appointment at Mayo in Scottsdale AZ in December.
Have you noticed any inner ear issues because of this or any other issues?
