I have to cook for gluten allergy (me) and a dairy allergy (my sister). I've been looking for quick butter subsititues if I would be out of soy butter.

I found that if you use canola oil, it works very well. It's the same ammount of canola as butter. If there are eggs, add one extra egg or egg subsitute.

I did this with brownies and a cake, and it worked great. Everything was so moist, it was really good.

Just thought I would throw the suggestion out there if anyone would want to use it :)
