Is this an actual allergic reaction?

Up until about four years ago, I could eat any meat I wanted without adverse reactions, but slowly I've noticed that unless it's bacon or boneless pork chops I can't touch pork without ending up with flu like symptoms and it's grown worse and seemed to expand because now even eating beef has begun to affect me. I've ended up either with mild nausea for hours after ingesting or getting sick and vomiting or feeling as though I have the stomach flu (diarrhea, dry heaves, vomiting, chills and hot flashes) for the next couple of days. Added to that I often find that I end up with Gastritis issues along with acid reflux.

It confuses me because as I said, I can eat boneless pork chops, pepperoni, some ham and sausage. I can eat hot dogs that are made of pork mixes without a problem. I can eat hamburgers and such things with ground beef. None of those things I can eat give me any form of issue. So, my concern and question is, does this constitute a food allergy or is there something else I should try... maybe test how things are cooked or something?
