Possible Carmine Allergic Reaction?

Growing up I was never allergic to anything.  A couple years ago I noticed when I ate certain things I got a really bad taste in my mouth.  Usually from Bubblegum or gum that has a fruit flavor.  The bad taste is like old already chewed bubblegum and the taste lingers...one time it lasted almost 3 weeks.  I can usually taste it the second I place whatever it is in my mouth that has the certain dye/preservative/flavor.  Once I ate a peice of trident orange gum, tasted the horrible taste in my mouth, the next day I broke out in hives.  So, I stopped eating bubblegum...today was the first day Ive had this reaction again and the only thing I could imagine it was from was either a rockstar energy drink or sugar free redbull.

Is this bad taste in my mouth considered an allergic reaction?  And if so, Could Carmine be the what Im allergic to? b/c if thats the case I want to visit my doctor to be tested for it.  And if not, what could be causing this?

The only thing Ive ever taken for the reaction is benedryll which got rid of hives but not the taste. (and rinsing my mouth doesnt help...EVERYTHING i eat/drink tastes like old chewed bubblegum or a slightly metallic taste).

please give me some advice
