I recently had the same type of experience except I had shellfish and red wine.  I had all the same symptoms you described and called a doc at 3 am.  The next day I ate the shellfish for lunch and about 20 min after I ate I felt like my tongue was swollen on the ridges and that my throat was swelling.  I went to the ER they gave me shots of steroids a breathing treatment for asthma and sent me home to take antihistamine every six hours.  The problem was that my symptoms did not go away for about a week.  I ended up going to the ENT and he put a scope down my throat and saw that I had severe swelling in the back of my throat from acid coming up in to my throat and mouth.  He also had me take a food allergy test and it turns out I have no food allergies.  After all the tests I had had it turns out that I have a hiatal hernia that is aggravating my throat and asthma and making me feel like I am having an allergy attack and aggravating my asthma.   I am not say that you don't have some kind of allergy it sounds exactly like a food allergy but, I thought it was worth telling my story in case you wanted to check out the possibility of having GERD that can cause some of these symptoms also.  Oh, and I also found out that when you have GERD like I do antihistamines really irritate your stomach and can make things even worse.
