Wife's adult onset to so MANY foods. Alarming!

Poultry, Yeast, Bone fish, etc. etc. in her mid-40's.   Now my wife's nose is starting to run after eating things that are supposed to be safe, intestinal discomfort.   Can adult onset food alergies being a symptom of another disease state?  

A deeply concerned husband...

I am a 46 year old female that has developed severe food allergies over the past 3 years. I already knew I had a dairy intoerance (consistently got a gastritis when ingesting it), but suddenly my throat began to swell and break out in hives from any meat protein. It started with beef, then pork, etc.

Currently all food protein (plant or animal) swells the back of my throat and causes it to break out in hives. I have never tested positive for any skin testing for food allergies. I have never had any allergies to pollen, dust, animals, nothing.
I make IgE antibodies against chicken only. The rest of the proteins cause an immediate or 10minute delayed histamine response in the back of my throat. All grains also cause edema, fever, lethargy and severe respiratory distress from inflammation of the airway. I cannot find anyone else that has 3 different immune responses to food. I live on Vivonex TEN formula in which the proteins are already broken down into amino acids. My allergist has one other patient that has severe food allergies and she is also in her 40's. However, the only immune response she has in the IgE response, so she knows exactly what foods to avoid. Apparently over the past year, she too is making IgE antibodies to more and more foods.
I've tried Gastrocrom, prednisone, allegra and singulair without much change in symtoms. The prednisone helps in massive daily doses, but only allows me to consume some plant proteins. It isn't worth the long term side effects of prednisone.
I have been living on Vivonex for over one year. When I initially became allergic to beef, I switched to mainly pork and chicken. It only took about 3 months for me to become allergic to the pork. Then I was mostly eating chicken and eggs for protein. Over a 3-4 month period of consuming more eggs, I developed an allergy to eggs, etc. The more I relied on one food group for protein, the faster I became allergic to it. It was also dose-dependent: the more I consumed, the more severe a reaction I would have.
I came to this forum today to see if I could find anyone else with this problem. Please be aware that anybody at any age can develop food allergies. I would advise your wife to follow her gut feelings about the allergies: even if she tests negative for the foods that bother her.

If anyone knows of any research that is going on in this specific area, please let me know.

yeast might be the biggest clue...I'd have her tested for Candida Albicans...it's a naturally occuring yeast in our bodies that overgrow and harm you with allergies etc...
