That's great that going gluten-free worked so well for you.
My recommendation would be NOT to introduce gluten into the diet,
if notable improvement is experienced.
And the only reason I'm mentioning this, is not to be a smart "bleep",
but the re-introduction of gluten and its affects, may take a while to manifest
(for many people it is not an immediate cause-effect result) risking having long term adverse effects again.
As I mentioned in my reply earlier, the effects of gluten can be experienced by some, many months after discontinuing the ingestion of gluten.

I had similar symptoms for a few years until I realized it was all from gluten. Then I took gluten out of my diet and within a few months all the symptoms went away.
Try to eliminate gluten for a few weeks and then introduce gluten back into your diet. If you feel worse after introducing gluten back in, then gluten is making you sick.
Try a wheat, gluten and dairy elimination diet for a few weeks to see if you experience any improvement.
Gluten is contained in many items people do not suspect, so please do a search for a complete list.
Also note that it may take many months for gluten effects to get totally eradicated, if indeed this is an issue for you.
Slow mercury exposure is always a great concern.
You should get proper testing for this and because mercury does not circulate freely in the blood stream, a blood test is probably NOT your best option.
FYI, look into the Provoked Urine Challenge, for possibly more accurate results.
