Why is my hemoglobin/hematocrit not rising months after hysterectomy?

Hi, I am 41. Had a hysterectomy October 2012. For years off and on, I have run a lower hemoglobin but that was due to heavy menstrual bleeding. Even so, the lowest it had ever been was 10.3 and that was only once. Usually, it would be about 11.0-11.5 on average. Not bad at all.

I had a hysterectomy almost 8 months ago. Everything was taken out, ovaries, uterus, fall tubes, cervix. Vaginal cuff remains. I just had some blood work done and while my hemoglobin was 12 and hematocrit was 35 which is considered low normal, it's actually lower than my January bloodwork of 12.4 and 36.7.

Why is my hemoglobin and hematocrit not rising after 8 months of being post surgically induced menopause?

Here are my numbers:

Component Your Value Standard Range Units
WBC 8.6 4.0 - 11.0 10e9/L
RBC Count 4.36 3.8 - 5.2 10e12/L
Hemoglobin 12.0 11.7 - 15.7 g/dL
Hematocrit 35.0 35.0 - 47.0 %
MCV 80 78 - 100 fl
MCH 27.5 26.5 - 33.0 pg
MCHC 34.3 31.5 - 36.5 g/dL
RDW 12.5 10.0 - 15.0 %

MEDICAL PROFESSIONAL
Hi!
Well, the hemoglobin is rising. If the hematocrit hasn’t improved then get a blood and urine test to look for blood. Get also a stool test for occult or hidden blood. Sometimes a urine infection or a bleeding gastric ulcer or IBS causes blood loss through either urine or stool. Please consult your PCP for primary examination followed by proper referral. Take care!

I also just had a cat scan of abdomen and pelvis and that was entirely normal minus a tiny spleen cyst that the radiologist said is hardly even worth noting, it is tiny and has been tiny for months and months and it's nothing.

And my comprehensive metabolic panel was normal completely.

I had a sed rate of 23, normal is 0-20 but for years this has been slightly elevated probably due to Iga Deficiency I have and inflammatory processes in the intestines that come and go. Actually, my sed rate in December only two months after surgery was 30. It has even decreased.
