When we adopted him, they said he was 9 months old. (this was back in June). He saw a vet then, and was neutered. He's done the teeth-grinding since the day we got him.

I will try and address your question, I wouldn't worry abt any neurological disorder unless the spasms become full blown seizures....some light twitching is quite normal, the shivering or spasms when he touches you could just be a 'male' thing, same with the small nips he gives....I have a boy that does this too. Is your kitty neutered? even after neutering some males will do this especially around a female (even human females)..IMO this can occur if the neutering was done after they've turned 6-7 months old and have already gotten the mating urge. Nothing to be concerned abt if it bothers you than discourage him laying beside you.
as far as the teeth grinding, that could indicate some dental pain, although he is a little young to be having teeth issues, have you had him examined by a Vet? did he look at his teeth?
