There are lots of gluten-free foods in the supermarkets now...even absolutely delicious cookies with pieces of chocolate in them! I doubt that I am Celiac (it is not in my family), but have autoimmune issues which might be causing a reaction. So I have been staying away from gluten for a while now.

This morning for breakfast I tried cooking some red quinoa with a little Celtic sea salt, added raisins, walnuts, a little coconut oil and a spoonful of the thick coconut cream off the top canned coconut milk.

I make an omelette chopped up onions, greens, and mushrooms in coconut oil seasoned with oregano and tumeric that is very good.

Brown rice is good, too, either hot or cold.

It was SO good! I bake my own gluten free english muffins and keep a supply in the freezer. They are not hard to do, but if you want to try, get some recipes off the web. Whole Foods might have gluten-free english muffins, too.

I have a gluten free family, the hardest being catering to my 9 month old daughter (not many baby finger foods are gluten free, if any!). For breakfasts we do gluten free pancake mixes, waffle mixes, danish drop biscuits, omelets, eggs, bacon or turkey bacon, toast, etc. Everything a non gluten free family would have. It all comes down to making your own stuff which can be a hassle but it's worth it. I make my own bread and freeze it then pull some out for toast in the morning, etc. You can mix and match the different gluten free flour mixes out there and find your liking. We stick with Pamela's pancake mix, Kinnikinik (SP?) waffle mix, Pamela's bread mix, and the other stuff just varies. Stay away from already made Gluten Free Pantry products or Glutino, I had a horrible experience before and do not recommend the brand. I recommend all Celiac's put some flax seed meal or other healthy tid bits into foods, I've gotten good at sneaking nearly half a cup of flax seed into our pancakes without my 3 year old noticing it! It helps with him going potty (no more constipation!) and it helps me just to go.

HOLY COW!  I too have a horrible reaction when I eat the Glutino Gluten free raisin bread.  I get dizzy, brain fog and a few other allergic reactions.  I'm just glad someone else had the same problem...thought I was going crazy.  I also have a very strange reaciton to the gluten free pancake mix.  Right now I'm affraid to eat anything.
