how can i tell if i have celiac disease.

I have been poked and prodded in Cyprus, by the doctors over here, and they still haven't found
whats wrong with me. As this has been a long going problem for me i decided to go on a gluten
free diet, and saw results within a couple of weeks. As i cannot find any gluten free bread over here
i sometimes have a sandwich with normal bread. My question is this, after eating bread with gluten in it
when would i start to have ceiliac symptoms again. Is it straight away, after a day, when is the 'normal'
time to start feeling ill again. Please help, just trying to diagnose myself, to see if i have ceiliac's ar something
else.
