I see that there is alot of anecdotal stuff on the 'net where folks are claiming their cholysystectomy caused or triggered celiac disease. I know from personal experience that I had to alter my diet after mine as fatty foods seem to really not agree with me. As far as I know, the only positive way to identify celiac disease is via bloodwork and/or a biopsy.
It's more typical that the gluten sensitivity was underlying the problems with your gallbladder. There is a tie-in between undiagnosed gluten issues purportedly causing malfunctioning of bile ejection of the gallbladder.
