I don't have any cookies recipes yet.. But I can give you a quick cupcake show stopper..hit of a party every time..best part it is soooo easy!!!!!
1) box of chocolate cake mix( your favorite brand) to make cupcakes
2) 1 can of vanilla frosting
3) 1 jar of peanut
4) a bag of Reecse Peanut Butter Cups (the small ones)
Bakes cupcakes according to the director on the box, let cool off
Prepare frosting ...take the vanilla frosting add as much as you like of peanut butter to make the frosting taste all like peanut buttery ..I like to add about 1 1/2 table spoon ..I mix it with a hand mixer just until it's all mixed well but you can do it by hand if you like for a thicker consistency. Once cupcakes are frosted cut Reese's Peanut Butter cups in half place cut side facing down on cupcakes.... Trust me everyone will be asking you for the recipe!!!! :)

Hi All...sorry I forgot to post this sooner ....
Tonight I made Smashed Potatoes.....yummy
Basically you bake potatoes until soft and smash them,then top and rebake....
Wash your potato..poke holes with a fork..drizzle olive oil over them and add coarse salt....
Bake at 400 for 20 to 40 mins (depends on size of potato)
When soft....remove from oven...flatten each potato with a spatula....top with garlic butter,spinach, bacon (cooked &cut up) top with cheese I used provolone and mozzarella .
Put back in oven until cheese melts....yummmmmmso good.
No Bake- makes 48 cupcake size cakes.....use foil cupcake papers
1- cup of crushed graham crackers
1/2-stick of butter (4 tbsps.) melted
2- tbsps. sugar
2-tbsps. brown sugar
Mix dry ingredients then add melted butter and mix until all crumbs are moist....
Put 1-tbsp of crumbs into cupcake liner and use a wooden pastry press/pusher to press crumbs flat...or a small glass....
Set in fridge to set up and firm for 1 hr.
Filling-
1- 8 oz cream cheese( soften at room temp)
1-15 oz can pure pumpkin ( not pie filling)
3 tsps pumpkin spice
1- 14 oz can sweetened condensed milk
2 tbsps of Jello Cheesecake flavored pudding mix
1-12oz cont of cool whip( a 2nd cont for garnish)
Beat Cream Cheese till creamy.....add pumpkin,pumpkin pie spice, pudding mix...beat until completely mixed.
Add swt condensed milk....mix again until well combined.....
Slowly fold in cool whip....
Use a pastry bag to fill cupcake liners......chill....then top off with more cool whip..store in fridge......enjoy.

Family favorite! Quick week night fix. The kids call it Chili Mac but no chili in it.
Fix a family sized box of Mac and cheese.
Meanwhile cook a pound of lean ground beef.
I like to add chopped onion and a touch of chili powder, salt and pepper.
When hamburger is fully cooked add one large can of ranch style beans.
Let it simmer on medium heat while finishing the Mac and Cheese.
Mix the Mac and cheese in with the hamburger and beans.
We usually have some French style green beans and either corn muffins or cheese and garlic biscuits on the side.
They clean the plates! It's my husband creation, and a favorite request!
The fruit dip is pretty good. I learned it at a party. It taste yummy

I am always looking to get more protein sources into my diet. I am not fond of meats, so I get creative wth proteins (beans, eggs, cheese, fish, etc). I am only comfortable in the kitchen eating or washing dishes. My husband loves to cook, so I just work as assistant. A few days ago I was thinking about quiche, which I love. Trying to make a leaner, less fatty one, I dreamed up this recipe, altered a bit from the traditional quiche with a crust, and just concentrated on the proteins. This is my first attempt at making something fom scratch, making up the recipe as I went along.
Crustless Quiche with Spinach and Feta
1 package spinach (frozen)
6 eggs
2 cups feta cheese
Salt and pepper
Preheat oven to 350
Lightly grease 9-inch pie pan
Heat oil in large skillet over medium heat
Stir in spinach
Continue cooking until excess moisture is absorbed
In a large bowl, combine well beaten eggs, feta, salt, and pepper
Add spinach and stir to blend
Scoop into greased pie pan
Bake in preheated oven until eggs have set (about 30 minutes)
Cool before serving
Makes 4 servings

Thanks for sharing.....I have done the graham cracker crumb crust with vanilla pudding....makes it fancy....lol.....and yummy.
I like the cool whip and fruit idea as well....
Let's see I have one a desert pie or a snack. I buy the gramcracker pie crust and chocolate pudding. If in a hurry you can use instant. I mix the pudding as directed and pour it into the pie crust. Set it in the frig until firm. Cut up and serve with cool whip. If you don't like chocolate use any flavor you like.
If you are a huge fan of fruit like I am, I like to use dip with mine. I make my own. I get a think of pineapples in a can or you can buy the whole pineapple. I buy a huge tub of cool whip. ( I'm a big fan of cool whip, iI don't know if you can substitute it for the others such as reddy whip). I cut up the slices of pineapple and put them in the bottom of a large bowl. Then I spoon the cool whip into the bowl on top of pineapples. Mix well. Cover it up stick in fridge let it chill for a couple hours, then serve with your favorite fruits. Works well with strawberries, apples, and peaches! HHaven't tried it with organges or other fruits.

The stewed tomatoes went fast and easy and a great way to use up all those tomatoes that are ripping all at once...
This will be great this winter to have fresh tomatoes to add to my Italian dishes.....

24 large tomatoes - peeled, seeded and chopped
1 cup chopped celery
1/2 cup chopped onion
1/4 cup chopped green bell pepper
2 teaspoons dried basil
1 tablespoon white sugar
In a large saucepan over medium heat, combine tomatoes, celery, onion, bell pepper, basil and sugar. Cover and cook for 10 minutes, stirring occasionally to prevent sticking.
This takes 30 mins prep time, 10 mins cooking time....and by freezing it you can have fresh tomatoes all winter for your own spaghetti sauce.
Ok I will start....I made these over the weekend and they were a hit....we had a surprise party for my SIL he was 30....and it was a Batman theme party....
I was told to use the Joker somehow with my cupcakes...so I knew I wanted them to look like a typical cupcake but not taste like one....so, I used a box cake mix...and instead of using water, I replaced it with beer....then I made a glaze for on top with confectioners sugar and again, replaced the water with beer....and when I glazed them while still wet, I drizzled bacon on top....then I added a small dollop of almond flavored icing....
If any one is interested in the icing recipe I will gladly post....
