son needs help gaining weight

My son has recently been diagnosed with celiac disease and has been gluten free, dairy free, soy free, and mostly egg free (fried and boiled eggs come back up, but he can handle small amounts of scrambled eggs) since the end of July.  He is also allergic to oranges and bell peppers.  He hadn't grown at all for about 2 years and had always been in the 25th percentile.  I just took him for a physical, and he is now further behind even though he just recently grew 3" since going gluten free.  He is now 87 lbs and 5' 2" and 14 years old.  He hasn't gained any weight even though he has been gluten free.  He never had a solid stool in his life until 3 months after going gluten free.  I don't know what to do to help him gain weight.  I'm scared he's not going to catch up.  He looks like he's starving.  He is tired all the time, too.  The doctor is running tests to see if he is anemic and also to check levels of other nutrients in his blood.  We eat a lot of legumes, brown rice, fresh fruits and vegetables, rice milk, cashew milk, coconut milk, cashews and almonds, sunflower seeds, dried fruits, gluten free whole grain cereals, gluten free oats, some quinoa, organic tortilla chips, plain potato chips, beef, chicken, tuna fish, all natural gluten free lunch meats and hot dogs, earth balance margarine, olive oil, sesame oil, coconut oil, almond flour, and coconut flour.  I don't know what else to feed him to help him grow.

It is great that he has been diagnosed, his stools are normal, and you now know how to feed him properly. He will be able to absorb nutrients now that the Celiac disease is getting under control which will help him gain weight. Suggest blending Coconut milk (high in calories) with frozen fruit and you have a shake. If you live in the US, there are 3 big Celiac Centers - NY, Chicago, and CA that have a huge amount of information on the disease and medical help. Here is an excellent website www.celiac.org which is a great resource for information of the gluten-free diet, and food products with gluten.
