Unfortunately this question is very difficult to answer.  There is no guarantee that this mesacol is the correct drug for your mother.  If it is not right, she will continue to be symptomatic.  Depending on the situation finding the right treatment can take awhile.  Where is she being treated?  There are certain hospitals in America that are clueless when it comes to any form of Inflammatory bowel disease.  There really are a few institutions that are light years ahead of everyone else in treating this disease.  You should have your mom inquire about a medication called 6mp which takes a long time to kick in but can often lead to remission.  Listen, it's a struggle, but believe it or not 5 to 6 times a day is not so bad comparatively speaking.  Then of course if things are really bad, there is a surgical cure to UC, but it is a last resort.  I am sorry I could not be more specific, I don't think anyone can give you a real time estimate.  Once she finds the right medication or combination of medications, she should start feeling better relatively quickly.  You should really research diets for UC, not eating spicy food is not enough.  There is a long list of things she should not eat.  There is also things that she needs to eat, and vitamins she should take.  Research the disease, there is so much information out there.  However, as things are now at 5-6 times a day she can still live a normal life, and as she adjusts, and you find the right medication she will become more comfortable.  It is a test in  patience though.  I wish you and your mom the best.
