The doctor before this comment has a very good point. You can actually eat more than the average person because your body doesn't know how to use all of it and often ignored the majority of it.
I have to say, as a teenage girl, I loved that. Yes, having UC was awful, but that fact that I could sit down 8 times a day and eat full meals and not gain a pound was actually quite nice.

Anyway, on a more serious note. I would try cooking for coconut oil. It has soothing factors for the digestive tract and is higher in fat, but better for you in the long run. I didn't eat any red meat, but I ate a lot of chicken and fish.. Fish is really good for the fatty acids as well. Veggies were not my friends. I didn't eat them raw or cooked.. Salad actually scared me. It was like I never chewed, when I know darn well that I did! I never ate whole wheat, nothing above white bread.
Try eating more times a day; breakfast, brunch, lunch, second lunch, and supper. This may mean you are passing more, but this gives you body a chance to use more.

You have been told not to eat protein shakes, but have you given them a try? Meal replacement shakes are a great idea for people with UC as well as still eating your meal. Juicing your veggies would be a better idea so you get the nutrients but not the fibre.

I really suggest that talking to a nutritionist would benefit you. Someone who can make meal ideas and learn what you like and don't like.

*** I was a big girl when I got sick. I was about 280lbs, 5'9 and only 11 years old. I lost 120lbs in 4 months. I couldn't gain weight above 130 for a long time, but I also was afraid to eat because of my condition. Once I changed my diet and started to listen to my body (around age 16-17) I was up to 160 and I grew another inch. 160 is the average weight for a woman my height. y sticking to this diet I was able to maintain my weight even though I was in the washroom 25-40 times I day.

Good luck, and I hope this helps.
