If you had sex with her only two weeks ago, and she missed her period like yesterday and took a pregnancy test this morning, yes, she could plausibly know for sure that she is pregnant, and depending on whether you are the only guy she has slept with, she could be correct in saying you are the dad.  I will add, though, she would not be "two weeks pregnant," the way doctors count it.

This is because back in the day, a woman's "weeks pregnant" were counted by the doctor as beginning on the first day of her last period that she had before getting pregnant.  The doctor did not think she got pregnant on the first day of her last period (she could not have -- she was having a period!) but that day was used to begin the clock because a period is a big, obvious signal and conception is hidden and secret.  This form of counting the weeks of pregnancy is still with us even now in the day and age of early pregnancy tests and ultrasounds.  That is why pregnancy, which takes 38 weeks from conception to full-term birth, is counted as being 40 weeks long by doctors.  They add two weeks at the front end to calibrate the count to the average woman's time between her period and getting pregnant.

What this means in regard to your partner is that she might have conceived two weeks ago with you and could indeed learn by now (if she used a sensitive test) that she is pregnant from the sex with you.  But a doctor would tell her that she is 4 weeks along, not two.  So, I suspect what she is telling you is her own description (2 weeks pregnant) and she has not yet seen a doctor.

I will say that if your sex with her was exactly 2 weeks 0 days ago, not "around two weeks ago maybe three," it would be just a tiny bit early for her to know she is pregnant for sure.  It is not impossible for a home test to pick it up this soon, but she would have to use a pretty sensitive test.  (Oddly, the tests sold at the Dollar Store are this sensitive.)

If you don't trust that she is in fact pregnant, ask her to take a test and show it to you.  Show up at her house with a test and ask her to pee on it and see if it shows pregnant.  (Of course, if you are on good terms with her now, you will blow that by doing this, since it is kind of an insulting thing to do.)

If you don't trust that she is pregnant by you (has she had another boyfriend recently?), depending on what she wants from you, you could take a paternity test either at the birth of the baby or earlier.  The ones done earlier (still during pregnancy) are very costly, however.  If she were to ask you for a lot of money during pregnancy, it might be worth it to know for sure if this is your baby.  But again, a lot depends on your relationship with her.  If you are close and know for sure she didn't sleep with anyone else but you, then you don't need to worry about prenatal DNA tests.  If she is just someone you know casually and you don't trust the situation, that is when to be noncommittal with her and if she presses you, to say you'll do what you should once the DNA results come.
