Dry Socket not healing

I had a tooth pulled 3 weeks ago by an oral surgeon.  There was discomfort the first few days but I thought that was normal.  A week ago it hurt so bad I went to my local dentist to look at it.  He told me I had a dry socket and packed it.  It felt better and I went back 2 days later and he did not re-pack.  I go back today with pain again and he looks and said I need to go back to the oral surgeon because "granulous tissue" is growing and it would need to be scraped out.  What does this mean and what treatment and recovery should I expect?
