Gum disease is treatable isn't it?

My gums really haven't receded much. Just pockets are forming. Not much bleeding- just occasionally when I brush, they bleed a tiny bit. No bone loss. Slight pain sometimes when I chew.

The future prognosis of your gum disease would be based upon the depth of the pockets, how much bleeding, how much gum has shrunk or receded, any bone loss, mobility and various other factors.  If its just starting the process, proper dental treatment and improved oral hygiene should help out.  If there is any underlying disease which may be associated with the gum disease should be controlled too such as diabetes.  Also, some medications can cause dry mouth which contribute to hygiene problems.

Well my gums aren't peeling off. What's happening is they're forming pockets. The top of my gums are kind of detaching from my teeth

Yes it is.  Depending on the severity of course.  Sometimes it can be so severe that teeth need to be removed.  If its gingivitis, its reversible.  If its more severe though, you may need more regular maintenance and improve your hygiene.
