Regarding Gums-oral irritations

First of all, will state that I have had issues pertaining to my hormones for quite some time. This will be looked into further.

Anyway. A few months ago, I ate a corndog w/mustard and the next day, found behind my lower front teeth a thin layer of skin was removed. They've been tender since. Again, recently, another layer came off (newly formed one). It's sensitive.
Just behind my upper front teeth is sensitive too. In looking at it, the thin piece of skin that nearly touches in-between the two front teeth, that extends a little further back...is abit swollen and whitish (obviously, irritated).

My question is, could this be the cause of a hormonal problem? I.E. a sensitive mouth.

I was also curious about a "cobblestone" throat. Have you seen this numerous times in your profession? I'm just trying to get a sense if this appearance is a common one.

I'm currently taking prilosec, OTC antihistamine/nasal decongestant and a good multi-vit with minerals.

The first part of your question sounds like a burn.  The cobblestone throat question is not seen often and is sometimes a symptom of other underlying conditions.
