Our son was dignosed with type 1 diabetes two weeks ago, he is only 19 months old. Does anyone have any suggestions on finding some information on meal planning?

I am not sure where you live but most places in the US have free diabetes educators and you can go see them. They have dieticians there also. That would be my first suggestion they have a lot of up to date material and are very well trained. You can also call your sons endocrinologist. Good luck!

We have been through the education, but I was trying to expand a little and find some interesting meals that would be healthy and delicious for the whole family.

Ingredients

3 large Granny Smith Apples; cored and diced
1/2 cup Walnuts
1/2 cup Raisins
1 cup Chopped celery
1 package small one, sugar free Butterscotch puddding
2 cup Non-fat plain yogurt

Directions

Mix cored and diced apples, raisins, celery and walnuts well. Mix butterscotch pudding and plain yogurt well. Mix pudding mixture with apple mixture well and refrigerate for at least an hour before serving.
