When I was first diagnosed, I was lucky to have a sit down with the registered dietician attached to the health care team. For females limit carbohydrates to 60 per meal. It sure worked for me. Last lab work 4.9 FBS and  A1C 5.3%. and I have lost 54 lbs since August

To control type 2 with diet you need to follow a low carb diet.

This may mean very low carb (35-50 g/day) or moderately low carb 50 - 100 or so), you will have to experiment to see what works by testing 1 hour and 2 hours after every meal.  Once you work out what foods affect you and how then you'll be able to test less frequently.  Portion control also becomes critical.

I find if I eat a lot of carbs then my fasting blood sugar the next day is particularly high.

There is plenty of information online about low carb and diabetes.   However the diet is made up of plenty of non-starchy veges, meats and nonsweetened dairy, some nuts, oily fruits such as avocado. Very limited fruits and grains.  It is quite opposite to the establishment high carb low fat diet.  This diet needs to be high fat, moderate protein and low carb.  Essentially the carbs are replaced mostly with fats, and with some additional protein.
