How much water should my mom have daily?

My mother 93yrs old, just put on insulin 100 mg of  Lantus, with 1- 100mg junvia pill per day, after landing in the hospital with a glucose readng of 870.
I am trying to get her on a balanced protein and vegatable diet. She is eating well, but does not like water. She is very constipated. I have added fiber sure to  her food to provide additional fiber daily.Today she needed a stool softner and was able to relieve herself,  I have tried to convince her that water intake is required. She drinks 2-3 cups of coffee and 2 cups of tea is this enough. If not, how many oz's of water is necessary. She is 5 ft. and 123 lbs.

Caffeine has an acidic effect and that naturally causes bowels to move irregularly and triggers constipation symptoms. Try changing to decaffeinated coffee and tea and add 2-3 cups of decaffeinated tea to her diet since she dislikes water.

does she has any heart condition, because that can determine how much water she can consumed without putting too much stress on her heart.  Also, drinking coffee and tea isn't the same as drinking water.
