Dogs can sometimes eat things behind our back. I once took my dog to visit someone and only knew she had eaten something "wrong" when the next morning her poops were mucussy and odd-looking!
I asked if he had given her anything to eat and he admitted giving her one cookie "One cookie wouldn't harm her!" he said.... But it was a cookie that was very sweet with a creamy filling.
Now many dogs might get away with that but not so mine! I had to fast her 24 hours on water only, then give her the rice/boiled chicken diet for a day or two to get her back to normal.
I don't know if anyone might have done something similar with your pup? Or maybe she has picked up things to eat that she shouldn't somewhere? It would be quite typical of a young pup to snaffle anything she could get hold of
The gel substance you are seeing is mucus. A certain amount of mucus in the stool is normal as that is what lubricates the bowel and facilitates the bowel movement. If there is more mucus than normal or if it seems that there is only mucus with no normal stool present, your puppy may have colitis. There are many causes of colitis. The most common is eating things that she shouldn't. This doesn't necessarily mean things that she has stolen without your knowledge, this can also mean foods that you are feeding her but are unaware that they can cause her harm. Rich foods, fatty foods and dairy products are common causes of colitis. If you are feeding her any table foods this could be the cause.
Speaking of foods, what ARE you feeding her? A premium brand dry or canned food? Grocery store brand dry of canned food?
Ghilly
If she's eating well, this doesn't quite sound like Parvo virus...Parvo is devastating and they are usually completely prostrate with it. Parvo also doesn't come and go like you said...I am not quite sure what this could be. But the wisest thing would be to take her to the vet. Collect a stool sample to take with you, as it will help in diagnosis.
