Tonsil trouble ?!?

Hello. New here. I was very happy to find such a great place to post this Q. Multiple searches revealed nothing. So here goes...
My wife has a very sore throat and actual throat tissue is peeling and shedding from it. This is the third time it has happened like this. Each time with less tissue loss. The first time so much tissue came off the inside of her throat that it was unnerving. Each time a visit to the clinic revealed no specific cause. And at her last visit the doctor asked her when she had her tonsils out. But she has never had her tonsils out. I'm no doctor, but on inspection it does seem that she has no tonsils.
Is this indicative of any conditions we need to know about, or is it normal sometimes for a body to just "shed" the tonsils?
Any help or advice is appreciated. Thank you
