refeeding edema

I was recently diagnosed with Celiacs disease, after my weight dropped to a dangerously low level.  After I started a new diet, gluten free, I was able to eat anything I want!  Great, huh?  Well, overnight I gained 25 pounds!  The doctor says I have refeeding edema, and is taking me off of diuretics, because he thinks they're doing more harm than good.  He has prescribed patience and a low carb diet.  Other than the bloating, I feel great (although I do get a LOT of gas).  Does anyone know how long the bloating will last, and how low my daily carbs should be?  The doctor didn't know.  Thanks for your help!
