Try not to work the same muscle groups day after day. Alternate upper and lower body days. If your muscles do not have a chance to rest they will not be able to grow big and strong. Sounds like you are at a plateau, you need to start mixing it up. Through in some isometrics, kickboxing or something that interests you. It is almost like your muscles have memory and get bored.

Forget about the low carb diet; eat a well-balanced low fat diet with normal sized portions, portion control is what you need to worry about, not eliminating good nutritious carbs such as whole grains and certain vegetables & fruits. Wait a least ninety minutes or more after a meal to workout (unless you are diabetic). Drink lots of water and make sure you eat a small well-balanced low fat meal after your workout to feed your muscles and restore your body’s fuel. A very low carb diet will not supply your muscle cells with what they need.

What you are going through is all very common and you will get through it and achieve all your goals. You may want to consider speaking with a dietician and personal trainer.
All my best!
