MRIs are wonderful tools but they can't diagnose every intracranial problem. I hope its "just one of those things" also.

Not sure what type of things would not be detected and still be possible. I have had two mris they were done 6 months apart. Today I kept seing flashing stars and have tingling in my face. Hopefully it's just idiopathic.
Seeing the veins in your eye is normal (entopic phenomena), very very few patients with idiopathic intracranial hypertension go blind. Most very serious causes of headache get much worse and lead to other serious symptoms or death within 3 years, the fact none have appeared is encouraging.
You will need to deal with the headaches with your physician team. You may need to go to a pain clinic also.
