Optic Neuritis

If you possibly had a mild case of optic neuritis and was given oral prednisone and did not get to a eye doctor till over a month later, would the eye doctor be able to tell if you have had optic neuritis?

Unlikely.  Depends on your age and whether there are any changes present on your optic nerve that would not be explained by any other condition for your age.  Unless you have a high resolution MRI from that episode that the eye doctor could review, would be very difficult to tell a month later if your vision is already back to normal.  They could make an educated guess as to what happened.
