retinal surgery

my mother is 81 and diabetic.  she will be going through retinal surgery.  we know she has to keep her head down, but how will this interfer with her eating?  does her head have to stay down all the time? we'd like to know exactly what she will experience, is there items that will make her more comfortable having to have her head down?   please help!
