All tests normal but still have symptoms

I sometimes have a soapy taste in my mouth and my voice has been very hoarse for 2 years.  I get a sour taste in my mouth every night.  I have had a Bravo test, a ph impendance test, a hida scan and a gastric emptying test.  Neither the Bravo nor ph impedance  tests showed any refluxing at all. My doctor says I do not have acid or bile reflux.  My gall bladder is working at 75% of normal and my stomach emptying perfectly. Could the bile be mixing with the acid in my stomach to make a normal ph reading and then refluxing and therefore not be showing up on these tests? The doctor told me to come back in 3 years for a routine endoscopy and is not at all concerned with Barrett's Disease. I have had differing medical opinions concerning having my gall bladder removed.  One doctor says to have it out and another says no.  What is missing in figuring out my problem?

Thanks for your comments.  I had the HIDA and sonogram on my gallbladder.  Since I have no pain, one surgeon thought it was not a good idea to remove it..plus he said it may make bile reflux even worse.  I don't smoke.  I am a personal trainer and have tried to have a healthy lifestyle my whole life of 62 years.  I think I might have "Silent Reflux" with a lot of bile thrown in for good measure!  I just don't think the ph Impedance test can test for bile per some of my research.  I hope the docs weren't lying to me just to get me to move on!

The sense of taste, I've found, is complex.  After having surgeries for heart and other  issues my sense of taste is affected. The fact that you have had all the good tests is encouraging.  Barrett's Disease is very easily determined, so that's good you don't have that.  
What test is given to determine gall bladder efficiency?  The fact that your digestive process is working perfectly is also comforting, I'm sure.
Do you smoke?  That certainly can affect your voice, as can alcohol consumption.  
I burned out my vocal chords because of acid reflux, but the fact I smoked as a younger man (much to my everlasting shame) hastened their distruction.
