HydaScan test too late?

Six years ago  I had upset stomach, diarrhea, weight loss. Then, blood tests and colonoscopy were done and came back negative. Symptoms subsided after a month of bland diet. Now, in July, same symptoms.
These tests were done, All came back negative.

July 14 Lab - Vitamin B1, Amylase, Lipasm, Iron, Transferrin,, %saturation, Vitamin B12,
Folate, TSH, Thyroxine Free
July 27 Lab - H Pylori & Liver Function
July 30 UltraSound Abdomen

August 3 CBC, ECG, chest Xray, C-peptide, insulin, TTA, Hepatitus (hepatitis),
August 5 CT Abdomen
August 6 Endoscope upper GI
August 10 HydaScan 38% ejection fraction

The symptoms were like a Gallbladder attack. The HydaScan was done over a month after the attack , well after symptoms had subsided. Could I have suffered a gall bladder attack and missed the opportunity to diagnose it? I'm pretty sure I can provoke another attack by eating the wrong foods. Should I deliberately provoke an attack or wait for another surprise attack?

You clearly have had a comprehensive workup which would have exclude many of the major GI causes.

You can consider looking at the biliary tree for any stones there, and can be evaluated with an MRCP or ERCP.

Repeating the HIDA scan with CCK stimulation may help pinpoint the gallbladder ejection fraction during the attack.

I would also consider blood tests to evaluate the endomysial antibodies to more definitively rule out celiac disease.
