What is a weight-gaining diet for pancreatitis?

I am a 49 yr. old female recently diagnosed with chronic pancreatitis, and had acute pancreatitis a month ago, caused by alcohol consumption. I've had 2 c-scans, a needle aspiration biopsy and ultrasounds which have shown multiple pseudocysts in the tail of my pancreas, one which was over 5 cm.  Presently I am not on any medication and the abdominal swelling has reduced considerably since the initial onset.  My gastroenterologist has put me on a low-fat, no red meat diet, and of course, complete abstinance from alcohol.

My problem is that in spite of a wonderful new awareness of the fantastic low-fat menus I can create, plus snacking on fruit and no fat nibbles several times a day, and an appetite that now far exceeds my "always hungry" husband's, I have been unable to gain any weight, and really need to be 10-15 lbs heavier.  Does anyone have any suggestions?
