Constant Diarrhea and Weight Gain

I am a 45 year old female.  I do smoke cigarettes and only drink socially.  I do not do drugs other than what is prescribed, and none are narcotics.  Over the past 3 or 4 years I've had an increase in issues with my bowels and diarrhea specifically. In the past year it has gotten much worse.  I'm afraid to be more that 50 ft from a bathroom.  I will eat a small amount and feel very full and bloated.  My stomach will even feel hard at times, and I have seen "movement" that looks like a baby kicking in the womb, but, there is no baby.  I have also had "muscle spasms" that seem to start at my rib cage area (rt side) and wrap around into my back.   I have had an Ultra Sound, Hida Scan, Cat Scan, Upper GI and Colonoscopy done.  None showing anything wrong with me.  Biopsies were done during the scopes with no results of anything bacterial or viral in my system.  I do have endometriosis (which my OB/GYN does not think is related).  I have also had about 25-30 lbs of weight gain in the past 18 months.  My weight has always been an "issue" my whole life, but I've never gained so much so quickly.  Also, when I do gain weight, the cup size of my bra's will also increase.  This is not the case this time around, which makes me believe it's not normal weight gain.
My stools are loose and watery.  Sometimes they are very "explosive".  Sometimes they will have mucos in them.  Sometimes I will pass just mucos (not too often).  If I take Ibuprofen, APAP#3 or Flexeril, then I will get slower moving thicker stools, but not "constipated", just harder for me to pass.  I don't go several days without bowel movements.  Most days I have a min of 6.  One of two will be a lot in volume and be very loose.  The rest normally are just small amounts that take their time passing through my system.  There is no consistency.  One day I have corn in my meal for lunch, and I will see corn the next morning in the toilet.  Then one day I can eat a sub with spinich on it and two hours later I am seeing a spinich leaf piece floating in the toilet.  
Also, another thing I find very "odd" is that my stomach will feel very bloated/full, I won't feel hungry.  But, I will have a bowel movement, and within 15 mins or less I will feel ravenous.  Then if I eat, I will feel full after just a few bites (like say a half a sandwich for lunch).
I hate to take immodium all the time, but, if I have to go anywhere that I don't know I will have quick access to a bathroom, I don't have any choice.  
Any thoughts on what I should try to do next?

I relate entirely to these conditions regarding weight gain and constant flow of loose watery stool.
I'm 36 and have had loose watery stool for ten years.  I've had a GI doctor determine an enzyme deficiency with my pancreas, and now I take Creon meds which helped with the consistency of the first set of bowel movements each day.  The next series of movements slowly turn to diarrhea then to clear liquid.
With the excessive amount of movements I am perplexed as to why I gained 60lbs over the course of the last 2.5 years.
I can safely say that my diet has not changed nor my alcohol intake.  
The GI doctor also determined that I had h.pilori and that was treated.  
But it doesn't explain the weight gain with no change in diet.  Some days I will consumed less than 1,000 calories.  A nutritionist suggested eating more food, but that caused more weight gain.  
What irritates me is the my immediate family members eat much more than I do multiple times a day and they maintain a regular weight consistently.  
I hope you have a solution that works for you and can find someone who can offer you a permanent solution.   I do take several types of medication for several conditions.  One OTC you may want to try instead of Immodium is a generic OTC that is singulary for diarrhea, Loperamide.  It dehydrates the colon and solidifies the waste, I had taken that almost daily for years without weight gain but stopped because there were times when it was too difficult to have a movement.

I know it's not Celiac, as they did the biopsy from my small intestine, and they also said it was not Crohn's - nor do I have parasties/bacteria/infections as a stool sample/test was done.

have you had any stool samples tested for parasites/infection/viruses?  If not, I''d suggest maybe starting there.

Also perhaps check into celiac disease - a lot of the symptoms fit what you're dealing with.
