Gallbladder removed Feb 09 but still having problems

I had problems for a number of years which were finally diagnosed as gallbladder attacks after I ended up in hospital for 5 days in October 2008 with cholecystitis. Eventually I had my gallbladder and a large stone removed in Feb 2009, however although I don't get the severe attacks at 2am in the morning like I used to I still am having many problems. I have a permanent dull ache on my right side back lower ribs
which can sometimes be sharp. I just don't know how my body is going to react assometimes I have diarrhoea, for a week or so then I'm ok for a bit,
I can eat something and within ten minutes I am having to rush to the toilet with sharp bowel pains. I changed my diet last year to whole-wheat pastas, no oil, reduced dairy etc, but after seeing a dietician was put on a low fat low fibre diet, but this had no affect (in fact white bread makes me worse). I am just wondering what is going on?
came back clear for chron's/celiac; I have no gallbladder and only get acid when drinking OJ and sodas (so I no longer have them). I first went to hospital with symptoms in 2001 and I am finding it increasingly invasive
as my life revolves around my ability to get to a toilet in time! For example a few weeks ago I met up with some girlfriends I had was mint tea and we had to plan the whole afternoon around the nearest public toilets as I kept having sharp bowel pains and loose stools. I have cut
out foods that I know from my food diary that immediately cause me a problem, like pastries, white bread and sausages. However sometimes I can have grilled chicken and boiled rice (either white or brown) and I am fine and other times I spent the rest of the day in the bathroom. Has anyone else had the same issues?
I do take peppermint oil capsules as recommended by my doctor, but I have little hope in finding anything to ease/resolve this problem. I see my consultant in another 3 months time, but even she has no idea of what else to look for. (As far as I am aware I have no allergies). Any suggestions/remedies or advice would be VERY gratefully received. (oooh and sorry for the long message and TMI :D)
