I have the exact same thing, I went gluten free 7 months ago and have been experiencing these pains that keep me up half the night until I tip over and fall asleep of exhaustion. I can't lay down or sleep on my sides as this makes it worse and intolerable.
It had gone away after a very bad period this January/February and just came back yesterday again.
I had been to the doctor before and he thought I might have mono, but all those tests didn't show anything.
For me it starts with a faint syptom (symptom) of shallow breathing, then lots of gas and some belching, then I bloat up like crazy and ultimately this crazy back pain that seems to wonder, usually on my right side. I read somewhere this can be caused by intestines not moving right and pushing against the rib cage etc.
I will try going without soy now and hopefully that will help. Thanks for posting your situation and advice!
