It's very possible that not having your gallbladder could be the cause of your problems with certain foods, or the fact that you have 'IBS.' Removing a gallbladder can mean that people may have trouble with a fair
tract is irritated, you may not process your food as well as it should be processed within the small intestine, and as a result you may push a fair amount of food through into the large intestine, and out. And if you're not digesting fat well, you could end up with fat malabsorption as well.
You might want to consider a low fat diet and see if that's of help.

If fats are not absorbed, you have PALE, foamy, sticky, foul smelling stool. This is the case? If yes, than the problem is LACK of the bile (maybe a stone stuck in the duct which delivers bile from the liver into the intestine), or from pancreatic disease (lack of pancreatic enzyme lipase, which is needed for digestion of fats). Malabsorption of fats could also be from small intestinal inflammation (celiac disease, crohn's disease)
What to do:
- stool test for FATS
- next, ultrasound of gallbladder/pancreas...
- next, if necessary, "an upper GI", this is a contrast X-ray of your upper bowel.
