Microscopic Colitis?

For the past two years I have been trying to figure out what is wrong with my stomach and was wondering if any of this might sound familiar to someone. I had been 160 pounds steady for several years. I could eat and drink anything.I loved spicey foods, beer, pretty much everything. I started noticeing that coffee was  giveing me a little bit of reflux so I cut back. Then foods started to make me have to go to the bathroom a couple times a day. Then on Christmas eve 05 I finished dinner and felt awful. I vommited and then had an explosive bm.The next day I had 20 t bms. I have been sick ever since. I now can't get past 135 poundsno matter how much I eat, although I have to watch my fat intake.. I generally stay at 130 no matter how much I eat. They have run several tests and only come up with GERD, fat malabsorption, and a slightly low white count with low blood platelets.I am taking pepcid and creon. They suggested MCT oil but it really increased my heartburn!I usually have 3 bms a day and they are usually very soft. They have ruled out celiac, gallbladder, pancreas and crohn's and are going to check for microscopic colitis. What else could it be?

Do you find any foods make things worse? Any celiac in your family? Any rashes? Fatigue that hits like a ton of bricks?

Fat, Fiber, too many carbs make things worse.. I have some vitamin and mineral def.I have neg. blood and biopsies for celiac.I sometimes do feel tired but just kind of figure that it is because I am not absorbing the good stuff in my food.My wife also tells me that my color is very grayish whenever I am sick. I have had some problems in the past with hyperparathyroidism and familial hypercalcemia but the levels have been fine this whole time. The weird thing is that ever since this has started I get every bug that is going around.I don't know if my immune system is busy with this stomach thing or what.
Thanks for helping. It means a lot!
