Pancreatic Enzyme Deficiency - Help me understand my symptoms

My Doctor assumes that I have Pancreatic Enzyme Deficiency.  I have been on a waiting list for 3 years now to see a specialist.  So, I am still waiting.  I am Female/38/5'8" tall/130lbs and I have never had any children.

4 years ago, I had chronic diahrea (sp), I was starved all the time.  While I was eating and after I ate.  I couldn't eat enough.  I ate every 10 minutes and I never gained weight.  

The worst symptom that I still have is after I consume any form of protein (meat or plant) I have an attack.  This happens hours later.  I start to feel confused, light headed, my hands shake so bad that I can't guide a spoon to my mouth.  I profusly sweat, so my hair and clothes are damp.

I take Pancrease MT 10 for enzyme replacement therapy.  This immediatly gets rid of the shakes (but not the attacks)within 20 minutes.  I can maintain my weight and the diahrea stops.  If I stop the enzymes, all the symptoms return within 2 weeks.

My question:  Why do I get these attacks after I eat protein?  Why do I shake and sweat so bad?  Is this harmful to my pancrease?  When I have the attack while I am sleeping - I can't wake up during them; afterwards, I am worn-out, sweaty, damp and I feel tingly throughout (from the shaking).

My Doctor is at a loss and I can't find any information.  I do NOT have cystic fybrosis!

taking digestive enzymes only wont solve ur problem,get back those vitamins and minerals back by taking high quality supplements, i think you do have  some nutritional defficiency, i had the same problem like you for almost a year! i waste a lot of time going to the hospital, with little help from doctors until i decide to talk with specialist in america via phone coz i live in japan,take vitb12 shot as well,and magnesium, you will feel great,it might take time to absorb those nutritional,i use to have panic attack,insomnia,heart palpitation,dizziness...e.t.c. it was all vitamin/mineral defficiency my friend! i was told with japanese doctor that am suffering from chronic stress! and start being given anti depressant,anti anxiety! until i decide to quit and do some search,i used gi pro health supplements and now am good,sorry for my poor english, am from africa tanzania,***@****
