For the past two or three weeks, every time I have eaten pork, I have experienced sudden loose, watery bowel movements a few hours later, sometimes accompanied by severe stomach cramps. We cook all our pork thoroughly, including use of a meat thermometer, and we are careful to clean everything well. It does not appear to be contamination, because no one else sharing the meal has a problem with it. I have several food allergies and intolerances, but this is the first time I have had this type of reaction to a food (except for when I eat 'way too much oatmeal or other fiber-containing food). It was hard to believe that the pork was causing this so I kept testing it and it has now happened at least five times. This reaction may have been going on longer than a few weeks, but I just made the connection; however, the first time I noticed it, my daughter also noticed that our pork seemed jucier than in the past, and I know the meat company does add a certain amount of water, salt, and sodium phosphates during processing, so I wondered if the additives had something to do with it. (I have been trying to buy meat without additives but can't find any in the local markets.) I don't know who to ask about this because I do not think my regular doctor knows much about food intolerances and my allergist doesn't seem to care if it is not allergy related. Has anyone experienced this, and do you know what could be causing it?
