what is the mechanism that would result in daily diarrhea after gall bladder removal?

Typically, it's due to unregulated release of bile into the duodenum. Bile is an intestinal irritant. When enough of it 'hit's the intestinal tract (without having been mixed with food) it causes rapid transit of substances through the GI system. No one really understands why bile release becomes unregulated.  

If that's what you're experiencing, you may want to consider a low fat diet. It can be of help in some cases. There are also bile-binding resins that can be tried if a low fat diet doesn't help.
