pancreatic lipase manufacturing

Hi,

I'm a student and I'm working on a research project testing the effects of commercial pancreatic lipase tablets on different types of food.  I know the procedure for activating the enzyme and the conditions to put it under to stimulate "digestion." the one thing I don't know is how to tell when pancreatic enzyme is done digesting the food.  I know average times of digestion for various foods, but is there any quantitative measure to tell when the enzyme is finished digesting? this is really important for me to compare relative digestion rates.  there must be some way to observe this too, as commercially produced pancrealipase has to be tested for efficiency.  I just don't know how it is done.  If anyone knows anything pleas let me know!
