vegetarian diet and bowel frequency

I switched over to a vegetarian diet 8 months ago and sometimes I feel that my body is still adjusting. I eat a lot of fruits and vegetables, whole grains, nuts and seeds rarely I eat junk or fried food. I have a question about consistency and frequency of bowel movements. As soon as I wake up in the morning I have a large bowel movement that does not seem like diarreah (diarrhea) but is formed but a little runny and of large volume. I will have 3-5 stools a day normally after meals and they are always medium-sized formed stools -healthy and different from my morning stool. I have been to the doctor for blood tests and occult stool samples and both are fine- why the large runny stools always and only in the AM?
