Low WBC and HCT

I am a 47 year old male, physically fit and active.
I recently had a test for celiac. I had been eating gluten for 12 weeks prior to the test, before that I had been gluten free for 8 weeks.

The test for celiac was negative, but my WBC and HCT were low for some unknown reason.
My lab results were

WBC 3.2 (range 4.5 - 13)
RBC 3.74 (4.5 - 5.3)
HGB 11.8 (13.0 - 17.5)
HCT 34.3 (37.0 - 49.0)
MCV 91.6 (80.0 - 100.0)
.
Could there be some reason for the low numbers, or is it just the stress on my system from the gluten?  I consider myself gluten sensitive because I feel so much better off gluten.
