blood in food servers glove

ok so i went to eat the other day with my wife and daughter at some mexican place that makes your food as you stand in line and order it. i order my meal and pay and my wife says was that blood on his finger. i think no way its prolly just salsa. ok so now of course im trying to see his hand which does have a glove on of some sort which prolly they are required to wear when serving food.  i keep watching him and sure enuff he checks out his finger and it is bleeding. he takes his glove off and goes and runs it under some water. so i feel like a complete arse because i let my family eat the food after i thought my wife was just being a worry wart.  what are our risk of hiv? i never saw blood on our food but thats not saying much it was a burrito and hard to see whats inside.  could blood penetrade his glove? what if he cut his glove and his finger at the same time.
