Not everyone contract HIV during a single act of unprotected sex, with an HIV positive partner. You have many odds in your favor. Having said that,  since you had unprotected sex with someone of unknown status, the risk can not be ruled out.

This risk warrants a test for you, and for that you will have to wait because one week is too short to assume the test conclusive. Get yourself tested 6-8 weeks after the exposure, followed by a follow up test at 12-13 weeks to get a conclusive and final result.

The symptoms you mentioned, are not because of HIV infection, because such symptoms apprea only after 2-4 weeks. Also, do not think about symptoms, they do not mean much in majority of the cases. Relax and wait until you can get a reassuring test result.

Assessing from symptoms alone can be misleading, that's why you need to get tested 3 months from your exposure. Try to ask around though, I suggest HIV organisation in your country.
