Since you are doing IV w/d's from patients who you know are HIV+, I will assume you are a professional phlebotomist. I will also assume you were assessed for your risk by a Risk Assessment Team and it was determined you should begin PEP. When anyone is put on PEP treatment, there is ALWAYS a patient advocate assigned to help you through the process and to make sure you are tested at the appropriate post-PEP window periods.
The US Department of Health protocol for post-PEP testing recommends testing at baseline, 4 weeks and 12 weeks post-exposure. The results at 12 weeks are conclusive.
You must know that symptoms are NEVER used to diagnose HIV. I am NOT a doctor, but the symptoms you've described sound like the common cold.
I strongly urge you to speak with your patient advocate or your personal physician regarding your symptoms and your anxiety.
I wish you the very best outcome.
