AMAZING FRIED RICE with Terriyaki Chicken No OVEN!!!

This has become a favorite at our house. My daughter LOVES the Japanese Steakhouse and I hate the price so we've created the food at home!  THESE RECIPES ARE FABULOUS!!!  

TERRIYAKI CHICKEN

4-6 chicken breasts grilled on grill or George Foreman
Terriyaki sauce to taste


Grill chicken, cut into pieces and put in skillet on stove and toss with Terriyaki sauce to taste (sometimes I add a little soy sauce too!!!)

FRIED RICE:

      4 c  cooked converted ( I cook it the day before and refrigerate it but you don't have to!)
      1 package of mixed frozen peas and carrots
      2    eggs; beaten
    1/2 c  diced onion; (1/2 small
           -onion)
  1 1/2 tb butter
      2-4 T Soy Sauce
      2-4 T Terriyaki Sauce
      1    salt
      1    pepper

Instructions

1. Cook rice following instructions on package (Bring 2 cups water to a
boil, add rice and a dash of salt, reduce heat and simmer in covered
saucepan for 20 minutes). Pour rice into a large bowl to let it cool in the
refrigerator.

2. Scramble the eggs in a small pan over medium heat. Separate the
scrambled chunks of egg into small pea-size bits while cooking.

3. When rice has cooled to near room temperature, add peas, grated carrot,
scrambled egg and diced onion to the bowl. Carefully toss all of the
ingredients together.

4. Melt 1 1/2 tablespoons of butter in a large frying pan over medium/high
heat.

5. When butter has completely melted, dump the bowl of rice and other
ingredients into the pan and add soy sauce plus a dash of salt and pepper.
Cook rice for 6-8 minutes over heat, stirring often.

THIS RECIPE SEEMS LONG BUT REALLY ISN'T AND MY FAMILY LOVES IT!  DO THE SOY AND TERRIYAKI SAUCE TO YOUR FAMILY'S LIKING!!!

Hi!  I use kikkoman, it's the orange bottle!  It works GREAT!  You can also double the rice recipe if you want leftovers!!!

Sounds great!  We enjoy going to Japanese restaurants, but would love to preapre a similar meal at home.  We can save the money to buy gas...bleh!  Thanks!

I hope you enjoy it! My daughter LOVES the Japanese steakhouse- and so do I of course but this comes close to it and is probably a lot healthier and I know it's much cheaper plus we usually have leftovers for lunch the next morning!
