Is your daughter allergic to all dairy products, or just milk? Is butter okay?

Its pretty simple to substitute the eggs in a cookie recipe. According to Vegetarian Cooking for Dummies, if a recipe calls for just one egg in several dozen cookies, that egg is not being used as a binder or leavening. So you can just omit the eggs, but add some additional moisture (like a tablespoon of soy milk) so the final product isn't too dry.

To expand on what Swampy said, I gathered the following when I was having to cook for my sister in law who was on a restrictive diet including no eggs:

When in need of egg subs, ask a vegan:

1 Egg =

1 T flax seeds + 3 T water in a blender (or coffee grinder even) until it's thick and goo-ey

2 oz soft tofu (blended with liquid portion of recipe) or same amount of a nut butter or mashed potatoes

1/2 mashed banana

1t soy flour + 1 T water

2 T cornstarch or instant mashed potato flakes

1/4 cup applesauce

* Just remember that eggs are used for one of two things in recipes: leavening or binding (usually binding, sometimes both) so anything that's going to make your ingredients stick together better will probably work :)

One of my daycare munchkins is gravely allergic to eggs, so I googled and discovered that you can substitute 1 tsp baking powder for every egg the recipe calls for.   I've done this when making waffles, cakes, muffins, cupcakes, and it's worked everytime!

Swampy found this one on the web and adapted it. The original recipe called for eggs and butter, Swampy thinks a little soy milk will do the trick for the eggs, as the oats will provide texture.

This would take minutes in a Kitchen Aid.

Swampy recommends that if you can find a pure corn oil margarine in your area, you use that. It is vastly superior to the soy oil margarines, especially in how your cookies will taste. You could also use lard, which makes fantastic cookies, except your vegetarian friends will not approve.

Come on over! Bring your daughter and we'll make cookies.

Oatmeal / Coconut cookies

1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
pinch salt
1/2 cup corn oil margarine, softened
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
1/2 teaspoon vanilla extract
1/2 cup old-fashioned rolled oats
1/2 cup sweetened flaked coconut
1/2 cup chopped pecans or walnuts
2T soy milk

   1. Preheat oven to 350*F (175*C).
   2. Combine flour, baking soda, baking powder and salt in medium bowl; set aside.
   3. In large mixing bowl, cream together margarine and sugars until fluffy. Fold in soy milk and vanilla until well blended. Mix in reserved flour mixture, blending well. Stir oats, coconut, and nuts until just mixed.
   4. Roll into balls the size of a walnut and place 2-inches apart on ungreased baking sheets. Slightly flatten and bake for 8 to 10 minutes. Transfer to wire racks to cool completely. Store in tightly sealed contaier.

Makes 2 dozen
